Mango & Prawn Summer Salad
Ingredients
- 300g King prawns (cooked)
- 1 large mango, sliced
- 1 Lebanese cucumber, sliced
- 1 long red chilli, finely chopped
- 1/2 bunch of coriander, chopped
- Olive oil
- Lemon juice
- Salt and pepper
- Iceberg lettuce
- Lemon wedges, to serve
Method
- Peel and deveined cooked prawns.
- In a bowl add iceberg lettuce leaves, mango, cucumber, chilli and coriander.
- Add 2 tbsp olive oil and 2 tbsp lemon juice.
- Season with salt and pepper.
- Add prawns, toss gently and serve with lemon wedges.
