Crunchy Sun-dried Tomato Dip

  • 200gm sun-dried tomatoes 

  • ¼ cup of oil from the sun-dried tomatoes 

  • 60gm of pine nuts 

  • 100gm feta 

  • 2 garlic cloves  

  • 1 tsp cumin  

  • ½ tsp salt 

  • 6 basil leaves 

  • 1 tbsp lemon 

  • Crackers, for serving 



  1. Add the sun-dried tomatoes, oil, pine nuts, garlic, cumin, salt, basil and lemon into a food processor and blitz until fully blended.  


  2. Serve the dip in a bowl and sprinkle over extra sun-dried tomatoes, pine nuts, thinly sliced basil and a drizzle of olive oil. Serve with crackers and enjoy!
