Whipped Greek Yoghurt, Passionfruit & Crumble

For the Whipped Greek Yoghurt: 

  • 1 cup Greek Yoghurt
  • 1/4 cup of heavy cream 
  • 2x tablespoon caster sugar

For the Crumble: 

  • 40g all purpose flour 
  • 40g brown sugar
  • 20g cold unsalted butter
  • 10g desiccated coconut 

For the Toppings: 

  • Macadamias, crushed
  • Passionfruit


  1. Preheat the oven to 180C fan forced.  

  2. Prepare the crumble by pressing the flour, brown sugar and desiccated coconut into the butter with your fingers. Mix until it forms small crumbs roughly pea-sized. If the mixture feels too soft, add more flour and sugar in equal parts. If it feels too dry, add more butter.  
  3. Add the crumble to a tray lined with baking paper and bake in the oven for 15 minutes, giving it a mix halfway through.  
  4. Meanwhile, combine the greek yoghurt, cream and sugar into a bowl. Using an electric hand mixer, beat for roughly 3-5 minutes until it forms a creamy consistency.  
  5. Serve by placing the crispy crumble into the bottom of a glass, top with the whipped greek yoghurt, fresh passionfruit and crushed macadamias. Enjoy!
