Cauliflower Steaks with Pomegranate, Pickled Red Onion and Feta

Ingredients
- 1 small red onion, thinly sliced into half moons
- 1 lime, juiced
- 1/2 teaspoon sea salt flakes
- 1 medium head cauliflower
- Olive oil
- 100g goats fetta
- Seeds from a small pomegranate or half a large
- 50g pine nuts, toasted (optional)
- Baby spinach leaves or rocket
Ingredients
- For the quick pickle: In a small bowl put the onion, salt and pour over lime juice. Leave to macerate for at least an hour.
- Preheat oven to 200c. From the centre, slice cauliflower into 2cm steaks. Heat a pan over medium high heat and brush the steaks generously with olive oil. Working in batches, sautee for 2 minutes each side, until golden and transfer to a lined baking tray, season with salt and pepper. Roast for approximately 10 minutes, until tender.
- On a large plate, scatter the spinach (or rocket) and place cauliflower on top. Crumble over the feta and scatter the pomegranate seeds. If using the nuts, throw them over the top and drizzle over some extra olive oil.
