Tropical Mango Smoothie Bowl
Start your day with a healthy breakfast bowl packed full of tasty tropical fruit. Mix up the toppings by adding your favourite fruits and nuts depending on what you like.
INGREDIENTS
- 2 frozen mangoes
- 1 frozen banana
- 1/3 frozen pineapple
- 2 tablespoons coconut yogurt
Toppings:
- 1/2 mango, cut into cubes
- Handful of granola
- 1 tablespoon coconut flakes
- 1 passionfruit
- Small handful of blueberries
METHOD
- Prepare the fruit a day before. Cut away the mango flesh from the seed and roughly dice, place it into a airtight container. Slice up the banana and chop the pineapple into small cubes, place these also in to the same container or a separate one. Freeze the fruit overnight to allow it to freeze completely.
- To make the smoothie, place the frozen fruit into a food processor along with the coconut yogurt. If the fruit has frozen into large clumps, very carefully chop them up into bite size cubes.
- Blitz its until it is well combined and the consistency is smooth. Place the mixture into a bowl and allow it to slightly melt a little before serving. Serve with the toppings of freshly sliced mango, a handful of your favourite granola sprinkled over the top, coconut flakes and a good helping of fresh fruit.
