Sweet Potato Chocolate Mousse
Ingredients
- 2 cups cooked sweet potato, cut into cubes
- 1/2 cup cocao powder
- 1/2 tsp cinnamon
- 1 tsp vanilla extract
- 3 tbsp flaxseed meal
- 3/4 cup soaked pitted dates
- 2 tbsp almond butter
- 3/4 cup almond milk
Method
- Put all the ingredients in a blender and blend until smooth. Add additional milk if required.
- Pipe or spoon the mousse into cups and garnish.
