Brookfarm Muesli With Strawberry Compote And Coconut Yoghurt

Ingredients

500g strawberries, cut into quarters

1/3 cup sugar

½ lemon, zest and juice

4 cups muesli
-
330g HFM coconut yoghurt
Method

Place the strawberries into a saucepan. Add the sugar, lemon zest, and lemon juice.

Stir through and bring to the boil. Reduce to medium heat and simmer for 10–15 minutes, until the strawberries are soft and syrupy.

Remove from the pan and transfer to a shallow bowl. Place the bowl in the freezer for 10–15 minutes, or allow to cool to room temperature.

Serve Brookfarm muesli with coconut yoghurt and strawberry compote.
