Mango Matcha Ice Cream Bars

Makes:12 bars
Ingredients:
Mango layer
- 3 large Kensington Pride mangoes (750g flesh)
- 100g caster sugar
- 100ml heavy cream
Matcha Ice Cream layer
- 200ml heavy cream
- 100g condensed milk
- 1.5 tbsp matcha
Method
- Blend mango flesh, sugar and cream until smooth. Pour into a lined loaf tin and freeze until set.
- For the matcha layer, blend cream, condensed milk and matcha until smooth and thickened. Pour over the mango layer and freeze again until fully set.
- Slice into bars and enjoy straight from the freezer.
