Makes 1 tray or 18 bars

  • 120g Butter
  • 50g Coconut Sugar
  • 4 Tbsp Honey
  • ½ Cup Pepitas
  • ½ Cup Cranberry Fruit and Nut Mix
  • 50g Pistachios
  • ½ Cup Apricot and Coconut Slice
  • ¼ Cup Chia Seeds
  • ½ Cup Desiccated Coconut
  • 1 Cup Oats

  1. Place the butter, coconut sugar and honey into a saucepan on medium heat. Bring to the boil, stirring occasionally, then turn off the heat.
  2. Meanwhile, roughly chop the apricot slice, pistachios and the fruit and nut mix. Place into a bowl. In the same bowl, add the pepitas, chia seeds, desiccated coconut, oats and rice bubbles.
  3. Pour in the hot honey butter mixture and quickly stir to coat all the dry ingredients.
  4. Line a shallow baking tray and add the mixture. Use a rubber spatula or wooden spoon to spread all over the tray and press down firmly until it is flat and has hardened.
  5. Place the tray into the fridge for at least 1 hour until fully set and hard. Remove from fridge and cut across both sides into equal rectangular muesli bar pieces.
