Sticky Homemade Muesli Bars

A plate of homemade muesli bars and balls

Great for lunchboxes, after school treats and post-workout fuel. All the ingredients are artificial colour free. Bonus.

Cooking time: setting time is 1 hrĀ Ā 

Makes 1 tray or 18 barsĀ Ā 

IngredientsĀ 

  • 120g ButterĀ 
  • 50g Coconut SugarĀ Ā 
  • 4 Tbsp HoneyĀ Ā 
  • ½ Cup PepitasĀ 
  • ½ Cup Cranberry Fruit and Nut MixĀ Ā 
  • 50g PistachiosĀ Ā 
  • ½ Cup Apricot and Coconut SliceĀ 
  • ¼ Cup Chia SeedsĀ Ā 
  • ½ Cup Desiccated CoconutĀ 
  • 1 Cup OatsĀ 
  • 2 Cups Rice PuffsĀ 

METHODĀ 

  1. Place the butter, coconut sugar and honey into a saucepan on medium heat. Bring to the boil, stirring occasionally, then turn off the heat.Ā

  2. Meanwhile, roughly chop the apricot slice, pistachios and the fruit and nut mix. Place into a bowl.Ā In the same bowl, add the pepitas, chia seeds, desiccated coconut, oats and rice bubbles.Ā

  3. Pour in the hot honey butter mixture and quickly stir to coat all the dry ingredients. Ā 
    Ā 
  4. Line a shallow baking tray and add the mixture. Use a rubber spatula or wooden spoon to spread all over the tray and press down firmly until it is flat and has hardened.Ā 
    Ā 
  5. Place the tray into the fridge for at least 1 hour until fully set and hard.Ā Remove from fridge and cut across both sides into equal rectangular muesli bar pieces.Ā Ā 

Cook's Note

  • Substitute with any other dry fruit or nut of your choice.Ā 
  • Keep in the fridge for up to 6 weeks.Ā
