Sticky Homemade Muesli Bars

Great for lunchboxes, after school treats and post-workout fuel. All the ingredients are artificial colour free. Bonus.

Makes 1 tray or 18 barsĀ Ā
IngredientsĀ
- 120g ButterĀ
- 50g Coconut SugarĀ Ā
- 4 Tbsp HoneyĀ Ā
- ½ Cup PepitasĀ
- ½ Cup Cranberry Fruit and Nut MixĀ Ā
- 50g PistachiosĀ Ā
- ½ Cup Apricot and Coconut SliceĀ
- ¼ Cup Chia SeedsĀ Ā
- ½ Cup Desiccated CoconutĀ
- 1 Cup OatsĀ
- 2 Cups Rice PuffsĀ
METHODĀ

Place the butter, coconut sugar and honey into a saucepan on medium heat. Bring to the boil, stirring occasionally, then turn off the heat.Ā

Meanwhile, roughly chop the apricot slice, pistachios and the fruit and nut mix. Place into a bowl.Ā In the same bowl, add the pepitas, chia seeds, desiccated coconut, oats and rice bubbles.Ā

Pour in the hot honey butter mixture and quickly stir to coat all the dry ingredients. Ā

Line a shallow baking tray and add the mixture. Use a rubber spatula or wooden spoon to spread all over the tray and press down firmly until it is flat and has hardened.Ā
Ā - Place the tray into the fridge for at least 1 hour until fully set and hard.Ā Remove from fridge and cut across both sides into equal rectangular muesli bar pieces.Ā Ā
Cook's Note
- Substitute with any other dry fruit or nut of your choice.Ā
- Keep in the fridge for up to 6 weeks.Ā
