Panettone French Toast

 

 

French toast made from slices of panettone

’Tis the season when you often find yourself with more than one panettone, thanks to generous loved ones. Here's one of three ways to wow the crowd and make sure nothing goes to waste!

Serves 4 

 

Ingredients  

  • 4 slices panettone, cut to 1.5cm thick 
  • 4 eggs  
  • 1/2 cup thick cream  
  • 1/2 cup milk  
  • 1/2 tsp ground cinnamon  
  • 1Tbsp honey, plus extra for garnish 
  • 200g fresh ricotta  
  • 1 cup mixed berries 
  • 2 sprigs fresh thyme  
  • 1/4 cup icing sugar (optional) 
  • 2 Tbsp unsalted butter   

 

METHOD

  1. Place the eggs, cream, milk, cinnamon and honey in a shallow bowl and whisk to combine. 
  2. Heat a nonstick frypan over low heat and grease with a little bit of butter.  
  3. Dip a slice of panettone in the egg mix on both sides briefly and shake off any excess.  
  4. Cook for 1-2 minutes on each side. Repeat the process with the remaining slices.  
  5. Top each piece with fresh ricotta and mixed berries. Sprinkle over a little bit of thyme, drizzle with honey and lightly dust with icing sugar.  

 

 NOTE:

This makes a great Christmas Day breakfast as well as being an excellent way to use up leftover Panettone.
