Sweet: Marmalade & Mustard Glaze

Orange marmalade and mustard glaze for Christmas ham


  • 1 cup orange marmalade
  • 1/4 cup soft brown sugar
  • 2 tbsp Dijon mustard
  • 1 orange, juiced & zested


  1. Combine marmalade, sugar, mustard, orange juice and zest in a pan.

  2. Simmer until sugar dissolves and glaze is thick and glossy.

Spiced: Cherry Rum

Spiced cherry rum glaze for Christmas ham


  • 1 cup Ham Jam
  • 1/4 cup dried tart cherries
  • 1/4 cup spiced rum
  • 3 star anise
  • 2 cinnamon sticks
  • 1 tsp allspice berries
  • 1 tsp whole cloves


  1. Combine Ham Jam, dried tart cherries, spiced rum, star anise, cinnamon sticks, allspice & cloves in a pan.

  2. Simmer until dried cherries are plump and glaze has thickened then remove whole spices.

Smoky: Maple Bourbon

Smoky maple bourbon glaze for Christmas ham


  • 3/4 cup hot tomato chutney
  • 1/4 cup maple syrup
  • 1/4 cup bourbon
  • 2 tbsp vino cotto
  • Hot sauce to taste



  1. Combine tomato chutney, maple syrup, bourbon and vino cotto in a pan.

  2. Simmer till combined, thick & glossy. 

  3. Cool slightly and add hot sauce to taste.
