This will keep well in the fridge for a week. Try it with any grilled meat, chicken or fish, roasted vegetables or grain salad. It will instantly add zip and vibrancy to nearly anything you cook. Nearly any combination of fresh green herbs will work.
- 25 g fresh green herbs of your choice (you could choose from parsley, mint, basil, dill, coriander)
- 3 anchovy fillets, chopped
- 2 cloves garlic, chopped
- 1 tbsp capers, rinsed juice of half a lemon
- 1 tbsp Dijon mustard
- 150 ml olive oil
- Blend all the ingredients in a food processor until smooth. Taste and adjust with salt and or lemon juice until the flavours are balanced.
Makes 200 ml of sauce.
