Cauliflower Rice with Mint & Turmeric Yoghurt Dressing

This cauliflower rice is a delicious alternative to rice! It works perfectly as a side to a curry, some grilled chicken or lamb cutlets, or as a communal family salad with any main. Go for a thicker style yoghurt rather than a thin Greek yoghurt and you can add any extra spices that you love!

INGREDIENTS

METHOD

  1. Grate the cauliflower on a box grater using the largest sized hole then place in a pan or skillet with some melted ghee or olive oil. Cook for approximately 10 minutes on a medium strength heat. Stirring the cauliflower rice every minute or so. Once ready set aside and season to your taste.
  2. Prepare the turmeric yoghurt by blending the two together adding some salt and pepper as you blend. 
  3. Top with fresh mint leaves and the turmeric yoghurt and it’s ready to serve!
