This cauliflower rice is a delicious alternative to rice! It works perfectly as a side to a curry, some grilled chicken or lamb cutlets, or as a communal family salad with any main. Go for a thicker style yoghurt rather than a thin Greek yoghurt and you can add any extra spices that you love!
- Serves 4
- 1 large cauliflower
- 1 cup of natural Barambah yoghurt
- 1 tsp turmeric powder
- ghee or olive oil
- salt + pepper
- Grate the cauliflower on a box grater using the largest sized hole then place in a pan or skillet with some melted ghee or olive oil. Cook for approximately 10 minutes on a medium strength heat. Stirring the cauliflower rice every minute or so. Once ready set aside and season to your taste.
- Prepare the turmeric yoghurt by blending the two together adding some salt and pepper as you blend.
- Top with fresh mint leaves and the turmeric yoghurt and it’s ready to serve!
