Smoked Salamon with Cucumber + Pickled Jalapeno Dressing

Ingredients:

1 continental cucumber, ½ cut into pieces, ½ finely sliced

1 tbsp pickled jalapenos + 1 tbsp pickling liquid

¼ bunch coriander leaves, plus some for garnishing

1 tsp sugar
-
1 pinch salt
-
¼ tsp pepper
-
1 lime, juiced
-
1 tbsp olive oil
-
300g smoked salmon
-
½ avocado, finely diced
-
3 radishes, finely sliced
-
¼ red onion, finely sliced
-
1 jalapeno, finely sliced
-
Toasted bread or crackers to serve

½ cup sour cream
Method

Place the cucumber pieces, pickled jalapenos and liquid, coriander, sugar, salt, pepper and lime juice into a blender. Blitz until combined.

Pass it through a sieve and into a bowl to remove the pulp. Add the olive oil and mix. Place into the fridge to chill for 10 minutes.

Nicely arrange the smoked salmon on a serving platter. Scatter over the avocado, radish, onion, jalapenos and cucumber all around the platter.

Spoon over the cucumber dressing and garnish with coriander leaves.

Serve cold with crackers and sour cream.
