Ricotta And Feta Dip

Prep time: 5-10 minutes  

Cooking time: none 

Serves: 6-8 

Ingredients:  

  • 180g ricotta  

  • 200g Danish feta 

  • 1 tbsp Za’atar 

  • ½ lemon, juiced 

  • 1 tbsp green olives, chopped  

  • 1 tbsp kalamata olives, chopped 

  • 1 tbsp pistachios, chopped 

  • 2 tbsp olive oil  

  • 1 tsp chilli oil (optional) 

  • Crackers and bread to serve 

Method 

  1. Place the ricotta, feta, 2 tsp of Zaatar, and lemon juice into a blender or food processor and blitz until smooth.  

  1. In a bowl, mix the olives, pistachios and olive oil. 

  1. Place the ricotta dip into a serving bowl, scatter with the olive salsa and sprinkle with the remaining Zaatar. 

  1. Add some chilli oil if desired and serve with toasted bread and crackers.
