Cashew Chicken


Serves: 4 
Preparation/cooking time: 35 mins 


500g Diced chicken 

2 tbsp Oil 

1 small Red capsicum, diced 

120g Snow peas, cleaned 


4 tbsp Hoisin sauce 

1 tbsp Soy sauce 

1 tsp Corn starch 

5 tbsp Water 


100g Roasted cashew nuts 

4 Spring onions, sliced 



  1. In a small bowl mix hoisin, soy, corn starch and water and set aside. 
  2. Heat oil in a frypan and heat to medium-high. 
  3. Add diced chicken, fry and turn until golden on all side, add capsicum, snow peas and stir. 
  4. Add sauce and starch mix, stir and bring to a simmer for 2 minutes or until chicken is cooked. 
  5. Add cashew nuts and spring onion, stir. 



Add chilli for some heat and garnish with coriander. 

Serve with rice.
