Mini Mango Pavlovas

Method

  1. In a bowl add 4 egg whites.
  2. Beat until soft peaks form.
  3. Slowly add 1 cup caster sugar.
  4. Add 1 tsp cornflour and 1 tsp vinegar.
  5. Add 1 tsp vanilla and a pinch of salt.
  6. Beat until firm and glossy.
  7. Spoon mix onto a baking tray.
  8. Form into a disk shape.
  9. Bake for 20-25 minutes at 150 degrees.
  10. Top meringue with whipped thickened cream.
  11. Decorate with sliced mango and passionfruit.
