Mini Lemon Bundt Cakes

 

This recipe is all about flavourful lemons and their wonderful zesty tang. Try this simplistic and quick mini bundt cake recipe, get the kids involved and decorate with a lemon drizzle icing and colourful edible flowers.


INGREDIENTS

  • 1 ½ cup all-purpose plain flour, sifted

  • 1 ¼ cup caster sugar

  • 175g unsalted butter at room temperature

  • 3 Eggs

  • 1 tsp baking powder

  • 1 tbsp lemon juice

  • Lemon zest

  • 1 tsp vanilla essence

Lemon drizzle:

  • 1 cup pure icing sugar sifted

  • 1 ½ tbsp lemon juice

Decorate:

  • Extra lemon zest

  • Edible flowers

 

METHOD

  1. Preheat the oven to 180°C

  2. Lightly grease a silicone mini bundt tin. If you don’t have one, a muffin tin also works well.

  3. Whisk together the butter (at room temperature) and caster sugar using either an electric beater or stand mixer on medium speed with the paddle attachment attached.

  4. Once the butter and sugar are fluffy, add the eggs one at a time mixing in-between.

  5. Follow by adding the lemon juice, lemon zest, and vanilla essence.

  6. Sift the flour and baking powder together.

  7. Turn the stand mixer off; fold the flour and baking powder into the butter mixture. Be careful not to overwork the flour.

  8. Spoon the mixture into the prepared bunt molds and bake for 16-18 minutes.

  9. Once cooked remove them from the oven and place on a cooling rack for 5 minutes before removing them from the tin. Clean the tin and bake the remainder of the batter.

  10. To make the lemon drizzle: combine the sifted icing sugar and lemon juice into a small mixing bowl. Using a spatula mix together until it’s a thick paste with no lumps. A little extra lemon juice can be added if you desire a runnier clearer looking icing. Drizzle the icing over the cakes.

  11. Decorate with extra lemon zest sprinkled over the top and edible fresh flowers while the icing is still setting.

Serve: 10 mini cakes
