Grilled Chicken Skewers with Garlic Dip and Pita Bread

Preparation/cooking time: 35 mins

INGREDIENTS:

  • 800g Chicken thigh fillets, cut into bite size cubes
  • 1 tbsp Smoked paprika
  • 1 tbsp Sweet paprika
  • 1 tsp Salt
  • 1 tsp Pepper
  • 2 tbsp Olive oil
  • 8 small or 4 large Pita bread
  • 200g Garlic dip (Toum)
  • 2 Tomato, diced
  • ½ medium sized Red onion, diced
  • ½ bunch Coriander, leaves
  • 2 tbsp Olive oil
  • Salt and pepper to taste
  • 1 Lemon, cut into quarters

 

METHOD:

  1. Place chicken cubes into a bowl and season with smoked paprika, sweet paprika, salt, pepper and olive oil, mix until well combined.
  2. Thread chicken onto skewers and grill on the BBQ until cooked.
  3. Place pita bread onto the BBQ to warm, then transfer onto plates.
  4. Top with garlic dip, tomatoes, onion, coriander and a drizzle of olive oil, season with salt and pepper.
  5. Take the chicken of the skewer and place on top of pita, fold and roll, serve with lemon wedges.
