D'Affinois on Crostini with Pistachio and Dried Apricot

Serves: ~20 crostini
Ingredients
- ½ Baguette
- 220g D’Affinois Cheese
- 8 Dried Apricots
- 50g Pistachios
- 1 ½ Tbsp Agave or Honey
- Olive Oil
- Salt and Pepper
- Edible flowers
Method

Preheat the oven to 200°C

Finely slice the baguette into 1cm thick slice. Place them on a tray and brush them or spray them with olive oil. Season with salt and pepper and place into the oven for approx. 13-15 mins until golden.

Finely slice the apricots and finely chop the pistachios, set aside.

Remove the crostinis from the oven and let them cool down.

Spread the cheese on the crostinis and add some of the sliced apricots.

Sprinkle with the chopped pistachios and drizzle with a little of agave or honey. Serve on a platter and garnish with a petal of edible flowers
