Blackberry Rose & Lime Mocktails

This refreshing beverage was inspired by the abundance of limes in season currently. The gentle tang and unmistakable lime scent combine beautifully with fresh blackberries, while rosewater imparts soft floral notes. This delicious drink is simple to prepare in advance and best enjoyed chilled with company on a lazy late summer afternoon. 

Makes approximately 2L (8 glasses) 

INGREDIENTS:

  • 1.25L (5 cups) of water 

  • 220g (1 cup) caster sugar 

  • 250g fresh blackberries + extra to garnish 6 medium limes, washed 

  • 2 tsp rosewater 

  • Ice, to serve 

  • Dried rose petals, to garnish

 

METHOD:

  1. Make a simple sugar syrup by placing sugar and 250ml (1 cup) of water in a saucepan. Heat gently until sugar dissolves completely. Remove from heat and allow to cool.

  2. Place blackberries in food processor and process to a purée, then press through a sieve for a smooth consistency. Discard seeds.

  3. Zest one lime and juice all limes. Remove seeds as required but avoid straining the juice as the pulp adds extra flavour. 

  4. In a large jug, mix together sugar syrup, blackberry purée, lime zest, lime juice and rosewater. Add remaining 1L of water, plus extra to taste if desired, and refrigerate. 

  5. Serve chilled with ice. Garnish with 1-2 blackberries in each glass and a sprinkle of dried rose petals if desired. Enjoy!
