Bacon Mac and Cheese

Serves: 4
Preparation/cooking time: 45 mins
Ingredients:
8 slices (180g) Bacon, cut into chunks
500g Macaroni
3 tbsp (50g) Butter
3 tbsp (50g) Flour
800 ml Milk
Salt and pepper to taste
4 tbsp (60g) Parmesan cheese, grated
1 cup Cheddar, shredded
1 cup Swiss cheese (gruyere), shredded
4 tbsp Course breadcrumbs (Panko crumbs are ideal)
Method:
- Pre heat oven to180c.
- Cook macaroni as per pack instructions then drain and set aside.
- Place a large saucepan onto the stove top and heat to medium high.
- Add butter and bacon, fry gently without colour.
- Once bacon is cooked remove with a slotted spoon and set aside.
- Add flour using a whisk and cook for one minute.
- Slowly whisk in the milk until smooth then bring to a simmer.
- Reduce the heat and continue to simmer for 3-5 minutes until sauce has thickened, whisking occasionally.
- Add the cheeses, season with salt and prepper and stir until cheese have melted.
- Add the macaroni and stir until well combined, then pour into a baking dish top with bacon and sprinkle with breadcrumbs, bake in the oven for 20-25 minutes or until golden.
Tips:
Add a teaspoon of Dijon mustard to the sauce for a delicious tang.
