Smashed Cucumbers with Feta and Olive Oil

Serves: 6 (as a side)
Ingredients:
- 4 large Lebanese cucumbers
- 3 tbsp capers
- ¼ bunch mint
- 2 tbsp sherry vinegar
- 100ml Lomondo Extra Virgin Olive Oil
- 100g feta
- Flaky salt
- Cracked pepper
Method:

Top and tail the cucumbers, then use a small rolling pin to gently smash them. You’re aiming to crack the flesh and open it up so it can better absorb the dressing. Once smashed, slice each cucumber lengthways, then roughly chop into 1cm pieces.

Scatter the cucumbers over your serving platter. Spoon over the capers, tear the mint leaves over the top, and splash over the sherry vinegar. Season generously with flaky salt and cracked pepper.

Drizzle with the Lomondo extra virgin olive oil and gently toss everything together so the cucumbers catch all the flavour.

Crumble the feta over the top and finish with one last drizzle of olive oil.

Serve alongside barbecued meats or roasted proteins for a refreshing, summery side.
