Snow Pea, Farro & Olive Salad
This salad is insanely yummy, looks so fresh and is perfect as is or with a little feta cheese crumbled over the top. Perfect for a picnic, you can serve this salad alongside anything from fish and prawns to meat!
INGREDIENTS:
- 2 cups farro
- 250g snow peas, trimmed
- ½ cup pitted olives, roughly chopped
- ½ cup toasted almonds, crushed
- ½ cup pepita seeds, toasted
- 2 tbsp sliced shallots
- ½ cup each picked dill, parsley, mint - all roughly chopped
- 3 tbsp olive oil
- 1 tbsp red wine vinegar
- Salt
- Black pepper
METHOD:

Bring a pot of water to the boil and lightly season with salt. Cook the faro for 15 minutes then drain, refresh with cold water, and drain again. Place into a mixing bowl.

Refill the pot with water and bring back to the boil. Season with salt and blanch the snow peas for 30 seconds, then drain and refresh in a bowl of ice water. Drain well and add to the farro.

Add the rest of the ingredients to the bowl and dress with the oil, vinegar, salt and pepper. Toss well and serve in a large shallow bowl
