Passionfruit Breakfast Bowl

 

 INGREDIENTS

  • 4 passion fruit pulp removed

  • 2 frozen bananas sliced

  • 7 frozen strawberries

  • ½ cup coconut milk

  • 2 tbsp coconut butter

Toppings:

  • Extra passion fruit pulp

  • Fresh berries (strawberries and raspberries)

  • Flaked almonds

 

METHOD

  1. Combine in a blender: the sliced frozen banana, frozen strawberries, the coconut milk and coconut butter. Blitz until the mixture is smooth.

  2. Add the passion fruit pulp to the blender and stir through using a spatula rather than blending it, which will cut the seeds up.

  3. Pour into a bowl and garnish over the top with sliced strawberries, raspberries, a spoonful of passion fruit pulp and a sprinkle of flaked almonds.

Serve: 1 large bowl or 2 small bowls
