It feels like summer and with the arrival of sweet refreshing mangoes there is no better time to whip up this delicious salad

Mango, Chicken and Avocado Salad

Ingredients

  • 1 mango - large diced
  • 1 roasted chicken
  • 1 avocado - large dice
  • 1 mango - large dice
  • 10 coriander leave
  • 10 mint leaves
  • 10 rocket leaves
  • Lemon for juice
  • Extra Virgin olive oil

Method

    1. Using roasted chicken, shred the leg meat of the chicken and slice the breast meat.
    2. Combine all ingredients listed above, dress generously with lemon juice & oil and season to taste
