Christmas Seafood Platter

Ingredients
- 2x Cooked Lobsters
- 2x Cooked Balmain Bugs
- 1kg Cooked Prawns
- 300g Chipotle Mayo
- 110g Tuna Sashimi
- 110g Salmon Sashimi
- 110g Kingfish Sashimi
- 1 Dozen Oysters
- 250g Marinated Octopus
- 3 Lemons
- 500g Pink Rock Salt
Method
- Cut the lobsters in half lengthwise.
- Cut the Balmain Bugs in half lengthwise.
- Arrange the prawns, lobster, Balmain Bugs, and marinated octopus on a platter. Serve with chipotle mayo and lemon wedges.
- Arrange the sashimi on a platter and serve with soy sauce, wasabi paste, and pickled ginger.
- Arrange the oysters on a platter on a bed of rock salt and serve with fresh lemon wedges.
