Chicken, Imperfect Pick Mango & Avo Tacos

This is possibly the most delicious way to celebrate Imperfect Pick Mangoes this season! Taco Tuesday never looked more beaut!
INGREDIENTS:

2 chicken breasts

2 tbsp Cajun seasoning

1 tbsp olive oil
-
Salt
-
2 Imperfect mangoes, 1cm diced

1 red onion, finely diced
-
1 small red capsicum, finely diced
-
1 bunch coriander, roughly chopped
-
1 tbsp olive oil
-
12 corn tortillas
-
¼ red cabbage, finely shaved
-
¼ white cabbage, finely shaved
-
2 avocados
-
2 limes
METHOD:

Place the chicken in a bowl and add the Cajun seasoning and olive oil. Season with salt and mix well. Leave to marinate in the fridge for at least 1 hour.

In another mixing bowl, add prepared mangoes, onion, capsicum and coriander. Season with a little salt and pepper and the olive oil. Mix gently to combine. Set aside in the fridge.

Preheat an oven to 190°. Place the chicken breast onto a lined baking tray and roast for 15-20 minutes. Check it is cooked by slicing a breast in half. Slice the cooked chicken breast and keep warm.

Preheat a frying pan over high heat and cook the tortillas 20 seconds each side to soften. Keep warm on a plate. Cover with a tea towel.

Slice the avocado into thin wedges.

Make the tacos by topping each tortilla with a mixture of the shaved cabbage, sliced avocado, chicken and mango salsa. Serve with the limes
