Warm Roast Beetroot, Lentils & Goats Cheese Salad

  • 1 bunch medium beetroot
  • 1 bunch medium golden beetroot (optional, use regular otherwise)
  • 4 tbsp salt
  • 4 tbsp sugar
  • 200ml red wine vinegar
  • 1 head garlic, peeled
  • 150ml olive oil
  • 200g green lentils
  • 2 stalks celery, thinly sliced
  • 100g roasted hazelnuts, crushed
  • 200g chevre goats cheese, crumbled
  • ½ bunch dill, picked
  • ½ bunch mint, picked
  • 2 tbsp red wine vinegar


  1. Trim the stalks and leaves from the beetroots, reserve and wash any of the baby inner leaves. 
  2. Place the beetroot heads in 2 separate pots, golden in one, purple in the other. Evenly divide the salt, sugar and vinegar amongst the pots and cover with water. Bring to the boil then turn down and simmer for 45 minutes or until tender when pierced with a skewer. Drain the beetroot and peel while still warm. When cool enough to handle, cut the beetroots into smaller wedges or random pieces and place into a large mixing bowl.
  3. Meanwhile, place the garlic and olive oil in a small saucepan and cook over a low heat for an hour until the garlic has softened but not breaking apart. Cool and drain. Reserve the oil for dressing the salad and other uses.
  4. Cover the lentils with 1 inch of water, bring to the boil then turn down and simmer for 15-20 minutes. Drain well and add 2 cups of the lentils to the beetroots along with the rest of the ingredients. Dress with the vinegar and 3 tbsp of the oil. Season with salt and pepper and serve amongst 4 bowls or 1 large platter.
