Anzac Biscuits

Prep time: 15 minutes  
Cooking time: 15 minutes  
Serves: 20 biscuits  

Ingredients 

  • 100g oats  

  • 140g plain flour 

  • 75g desiccated coconut 

  • 180g brown sugar  

  • 150g unsalted butter 

  • ¼ cup golden syrup 

  • 1 tsp baking soda 

  • 2 tbsp boiling water  

Method  

  1. Preheat the oven to 180°C. 

  1. Place the oats, flour, coconut and brown sugar into a mixing bowl and mix through. 

  1. Add the butter and the syrup into a saucepan on medium high heat until combine. 

  1. Place the baking soda into a small bowl and add the boiling water, mix through until dissolves.  

  1. Add to the butter mixture. This will bubble up and it is totally fine. Stir for 5 seconds and add to the bowl with the dry ingredients. Mix well 

  1. Lined 2 baking trays with baking paper 

  1. Scoop the biscuit dough into equal size portions and roll them into balls. Then pat them into a patty. Place on the trays with enough space for them grow on size while baking.  

  1. Bake for 10-12 minutes for chewy biscuits or bake them for 15 minutes for a crispier version. 

  1. Remove from the oven and let them rest for couple of minutes before transferring to a rack to cool down. 

  1. Serve at room temperature.
