Anzac Biscuits

Serves: 20 biscuits
Ingredients

100g oats

140g plain flour

75g desiccated coconut

180g brown sugar

150g unsalted butter

¼ cup golden syrup

1 tsp baking soda

2 tbsp boiling water
Method

Preheat the oven to 180°C.

Place the oats, flour, coconut and brown sugar into a mixing bowl and mix through.

Add the butter and the syrup into a saucepan on medium high heat until combine.

Place the baking soda into a small bowl and add the boiling water, mix through until dissolves.

Add to the butter mixture. This will bubble up and it is totally fine. Stir for 5 seconds and add to the bowl with the dry ingredients. Mix well

Lined 2 baking trays with baking paper.

Scoop the biscuit dough into equal size portions and roll them into balls. Then pat them into a patty. Place on the trays with enough space for them grow on size while baking.

Bake for 10-12 minutes for chewy biscuits or bake them for 15 minutes for a crispier version.

Remove from the oven and let them rest for couple of minutes before transferring to a rack to cool down.

Serve at room temperature.
