Turmeric Porridge with Toasted Mixed Nuts
INGREDIENTS:

2 1/2 Cup rolled oats

2 Cups of water

2 Cups of milk

1/4 tsp turmeric powder

Pinch of salt
-
1 tsp sugar

1/4 tsp ground cinnamon

T tsbp yoghurt (greek or coconut based)
METHOD:

Preheat your oven to 180°. In a baking tray lined with baking paper, palce mixed nuts and seeds and sprinkle over cinnamon and a pinch of salt. Drizzle with olive oil and mix together. Place in the oven for approximately 4 mins until golden brown.

Meanwhile, in a medium sized saucepan, mix together the oats, milk, water, salt, sugar and turmeric powder.

On a medium high heat, bring your pot to the boil while stirring constantly. Once your oats start to bubble, turn the pot down to low and let simmer for approx. 5 mins until it becomes creamy. Add some more water if necessary.

Serve your oats hot with a spoonful of yoghurt, toasted mixed nuts sprinkled over and a drizzle of honey, maple syrup or agave.
