Turmeric Muesli Bars

These muesli bars are packed with citrus flavour and healthy goodness and are perfect for adding to a lunch box or a mid day treat.

INGREDIENTS:

  • 290g pitted dates

  • 1 1/2 cup whole rolled oats

  • ¼ cup desiccated coconut

  • ¼ cup flaxseed meal

  • 3/4 cup almond butter

  • ¼ cup honey

  • ¼ cup and 1 tbsp coconut oil

  • 1 orange zest

  • 1 tsp vanilla

  • 2 tsp powdered turmeric

  • ½ cup dried cranberries roughly chopped

  • ¼ cup blue berries

  • ¼ cup Pepitas

  • ¼ cup sesame seeds

 

METHOD:

  1. Pre-heat the oven to 160°

  2. Combine the following ingredients into a food processor: dates, ½ cup rolled oats, desiccated coconut, flaxseed meal, almond butter, honey, coconut oil, turmeric powder, orange zest, and vanilla extract. Blitz until it comes together into a thick sticky mixture.

  3. Turn the mixture out into a large mixing bowl. Add the dried fruit, pepitas and sesame seeds along with the remanding 1 cup of whole rolled oats. Using your hands gently mix all the ingredients together.

  4. Spread the mixture out into a flat baking tray (29cm x 19cm) lined with baking paper. Using a spatula or your hands press it down firmly and level it out to be roughly 2-3cm high.

  5. Bake in the oven for 25-30 minutes.

 

Prep / cook time: 40-45 minutes

Makes: 6-7 long bars or 12 short bars
