Tandoori Skewers with Mango Salsa

 

INGREDIENTS:

  • 500g Chicken, diced into cubes

  • ½ jar of Tandoori paste

  • 1 tbsp Greek yoghurt

  • 1 Lime, juice and zest

  • Skewers

Salsa:

  • 1 Mango, diced into cubes

  • ½ Capsicum, diced into cubes

  • ¼ Red onion, diced into cubes

  • ½ avocado, diced into cubes

  • Juice of 1 lime

  • Coriander, to taste

  • Mint, to taste

  • 1 can of corn or 1 fresh Corn cob, steamed, corn kernels removed from the cob


METHOD:

  1. In a bowl, add the tandoori paste, yoghurt, lime juice and zest, and mix to combine. Add in your diced chicken pieces and combine. Make sure the chicken is evenly marinated. Leave to marinate. If you have time, marinate this overnight.

  2. In the meantime, make your salsa by finely dicing the capsicum, mango, avo and red onion; place this into a mixing bowl. Add the steamed corn if your using fresh or rinse the canned corn and add. Roughly chop up the coriander and mint and add to the bowl. Squeeze over the juice of the lime and season with salt and pepper.

  3. Add the diced chicken onto the skewer. Using a BBQ, grill plate or fry pan on medium to high heat, place your chicken skewers onto the heat and cook for about 10-15 minutes, ensuring that each side is evenly cooked and charred.

  4. Serve your tandoori chicken skewers with the fresh mango salsa

Cooking time: 20 - 30 minutes
