T-bone Steak with Rosemary, Garlic, Capers and Honey Butter

Ingredients:
- 1 Cape Grim T-bone steak, 500-700g
- 1 tsp salt
- ¼ tsp pepper
- ½ tbsp olive oil
- 50g butter
- 1 tbsp capers, chopped
- 2 garlic cloves, smashed
- 2 rosemary sprigs
- 2 tsp honey
- ½ lemon, juiced
Method:
1. Remove the Cape Grim T-bone steak from the fridge 1 hour before cooking so it comes to room temperature.
2. Pat the steak dry with paper towel, then season on both sides with the salt and pepper.
3. Heat a SolidTeknics frying pan over high heat. Hold the steak upright on its fat edge and sear for about 1 minute, or until the fat is golden and starting to render.
4. Lay the steak flat in the pan. Drizzle in the olive oil and sear for about 2 minutes on each side. Repeat once more, cooking for another 2 minutes per side (about 8 minutes total) for medium-rare. Adjust the time to suit your preferred doneness.
5. Reduce the heat to medium. Add the butter, capers, garlic, rosemary and honey. Tilt the pan and spoon the melted butter over the steak for 1-2 minutes, until glossy and aromatic.
6. Add the lemon juice to the pan and baste the steak again. Transfer the steak to a cooling rack set over a tray and pour the pan butter over the top. Rest for 10-12 minutes before slicing.
7. Slice the steak from the bone and serve with your favourite sides.
