Leftover Mince Power Bowl

Leftovers are one of the most underrated tools for feeding ourselves well. When you’re already cooking dinner, that food can easily become tomorrow’s lunch too - if we actually plan for it - this is my top tip - always be thinking of your next meal! This bowl is about using what’s already been made, then assembling it fresh so it still feels good to eat, not like sad reheated scraps.
A good leftover bowl doesn’t need much thinking. You’ve already got the hard part done. All you’re doing is pairing your protein with a carbohydrate, adding a bit of fat, and finishing with something fresh or creamy to bring it all together. Five minutes, no extra cooking, and you’ve got a lunch that will actually keep you going.
Ingredients:

200g Leftover cooked mince

1 cup leftover cooked sweet potato

70g cottage cheese
-
1 tsp hot honey
- 1/2 avocado, slice
Method:
- Add the leftover sweet potato to a bowl and top with the cooked mince.
- Spoon over cottage cheese, drizzle with hot honey, and finish with sliced avocado.
- Eat immediately or pack for later.
Ingredient Swaps and Variations:

Swap mince for leftover chicken, turkey, lamb or lentils.

Swap sweet potato for roast potato, rice, quinoa or pumpkin.

Swap cottage cheese for Greek yoghurt, ricotta or hummus.

Swap hot honey for chilli oil, regular honey, BBQ sauce or pesto.
- Add crunch with cucumber, cabbage, pickles or spring onions.
