Strawberry and Cucumber Salad

 

This simple salad is perfect as a starter on a sunny day, itʼs all about quality ingredients and you will fall in love with this simple yet delicious salad with the hint of peppery tones from the radishes to the sweet taste of strawberries.

INGREDIENTS

  • 1x 250 g packet baby cucumbers

  • 4 small radishes

  • 1x shallot thinly sliced into rings

  • Pink Himalayan salt / fresh ground pepper

  • 1 x punnet Queensland strawberries cut into half or quarters depending on the size you like

  • A small handful of fresh mint

  • 100 grams Parmesan block or grated

Vinaigrette

  • 1/2 tablespoon red wine vinegar, apple cider vinegar or a squeeze of lemon

  • Pinch of pink Himalayan salt

  • 3 x tablespoons extra virgin olive oil

  • Freshly ground pepper

METHOD

  1. Start by making your vinaigrette. Place vinegar into a bowl with a pinch of salt slowly add the oil whisking continuously to emulsify the oil and vinegar. Season with pepper and salt

  2. Thinly slice the radishes, cucumbers, add together in a bowl with the cucumber with the shallot, season with salt/pepper, toss to combine.

  3. Arrange the cucumber and radishes on your serving plate, add the strawberries fresh mint and shavings of Parmesan. Drizzle with the vinaigrette just before serving.
