Pulled Banana Skin Tacos
INGREDIENTS:

3 banana peel Â

1 jar HFM Mexicana sauce Â

½ bunch coriander Â

1 tub HFM guacamole Â

1 small tub sour cream Â

1 cucumber Â

2 tomatoes Â

1 baby cos lettuce Â

METHOD:

Using a spoon, remove the soft fibres from the inside of the banana skin and discard. Finely slice the banana skin lengthways and place it in a small pot with water and a pinch of salt. Bring to the boil and turn down to a simmer, let cook for 15 min until soft, drain and set aside.Â

Meanwhile, place the HFM Mexicana sauce in a medium size pot and add ½ cup water, bring to the boil and turn down to a medium simmer. Add in the banana skins and mix together. Cook for another 10 – 15 mins, add some chopped coriander and season with salt and pepper.Â

Finely slice the cucumber, small dice the tomatoes and chop the rest of the parsley. Mix all the ingredients together, season with salt and pepper, drizzle olive oil and a splash of lemon juice.Â

Into the individual lettuce cups, add your pulled banana, guacamole, sour cream and pico de gallo. Serve and enjoy!
