No Churn KP Ice-CreamThis is a simple recipe that takes advantage of delicious and fragrant KP mangoes. It's a great recipe to make ahead so you can take a scoop or two from the freezer when the temperature starts to rise! Just grab some waffle cones and you're on your way!


  • 2 imperfect mangoes

  • 1/2 cup caster or coconut sugar

  • 2 tins coconut cream (400ml)

  • Juice 2 limes


  1. Cut the flesh from the mangoes and puree in a blender.

  2. Measure 1 cup of puree and add to a bowl with the sugar, coconut cream and lime juice.

  3. Whisk well to dissolve the sugar then pour into a container and place in the freezer for 1 1/2 hours.

  4. Remove and give a quick whisk then return to the freezer and let it set overnight.

  5. Before scooping, place into the fridge for 20 minutes to soften slightly.

  6. Serve in waffle cones or in bowls with extra diced mango and berries.
