Mini Strawberry Dutch Pancakes
This recipe is quick and easy to make. Get the kids involved to mix the ingredients, add their favourite berry toppings, and a good drizzle of maple syrup when serving- the best part is watching the pancakes rise and puff up before your eyes through the oven window. It’s like magic.
INGREDIENTS

4 eggs

¾ cup all-purpose flour

¾ cup milk
-
1 tbsp sugar
-
1 tsp vanilla essence
-
2 tbsp butter melted and slightly cooled

pure icing sugar for dusting

Fresh strawberries cut in half or quartered

Maple syrup for serving
METHOD

Preheat the oven to 200C°

Place a muffin tray in the oven to warm up.

Combine the eggs, milk, flour, sugar, vanilla essence and 1 tbsp of melted butter into a large mixing bowl. Whisk together (by hand or with a hand mixer) until well combined.

Take the hot tray out of the oven, be careful not to burn yourself.

Brush each muffin hole with the remaining melted butter so they are well coated.

Half fill each muffin hole with the pancake mixture.

Place in the oven to cook for 12-15mins or until they are puffed up and nicely golden brown.

Serve hot, straight from the oven with a good dusting of icing sugar, fresh strawberries, and a drizzle of maple syrup.
