Avocado Toast with Crispy bacon and Soft Boiled Eggs

Cooking time: 15 minutes 
Serves: 4 

Ingredients 

  • 2 large avocados 

  • ½ tsp salt 

  • ¼ tsp pepper 

  • 2 tsp lemon juice  

  • 4 large eggs 

  • 80g streaky bacon  

  • 4 sourdough bread slices  

  • 4 tbsp crumbled feta  

Method 

  1. Bring a BBQ or griddle pan to high heat and bring a saucepan with water to the boil.  

  1. Place the avocados into a large bowl. Season with salt and pepper, add the lemon juice and mash using a potato masher or a fork until smooth. 

  1. Place the eggs into the boiling water and cook for 7 minutes. Remove from water and place into a bowl with ice water to stop them from further cooking. Peel and cut in half. 

  1. Cook the bacon for 5 minutes on the BBQ or griddle pan until golden and crispy.  

  1. Grill the bread slices for 2-3 minutes on each side until golden and charred. 

  1. Spread the avocado puree on each bread slice, top with the eggs, add bacon and sprinkle with feta cheese.  

  1. Garnish with any herbs of your preference if desired. Enjoy.
