Japanese Style Oysters

Prep time: 5 minutes 
Makes: about 1/3 cup 

Ingredients:

  • 2 tbsp soy sauce 

  • 2 tbsp rice vinegar 

  • 1 tbsp mirin 

  • 1 tsp wasabi 

  • 1 tsp sugar 

  • 1 tbsp grapeseed oil 

  • 2 tsp lemon juice 

  • Salmon roe, to serve (optional) 

  • 12 freshly shucked oysters 

Method:

  1. Place the soy sauce, rice vinegar, mirin, wasabi, sugar, grapeseed oil and lemon juice in a mixing bowl. Whisk for 1 minute or until the sugar has dissolved. 

  1. Refrigerate until well chilled. 

  1. Spoon over oysters and garnish with salmon roe, if desired.
