Japanese Style Oysters

Prep time: 5 minutes
Makes: about 1/3 cup
Ingredients:

2 tbsp soy sauce

2 tbsp rice vinegar

1 tbsp mirin

1 tsp wasabi

1 tsp sugar

1 tbsp grapeseed oil

2 tsp lemon juice

Salmon roe, to serve (optional)

12 freshly shucked oysters
Method:

Place the soy sauce, rice vinegar, mirin, wasabi, sugar, grapeseed oil and lemon juice in a mixing bowl. Whisk for 1 minute or until the sugar has dissolved.

Refrigerate until well chilled.

Spoon over oysters and garnish with salmon roe, if desired.
