Brookfarm Muesli Bars

Prep time: 5 minutes 
Cooking time: 5 minutes + 2 hours setting time 
Serves: 12–14 bars 

Ingredients: 

  • 4 ½ cups Brookfarm Macadamia & Cranberry Toasted Muesli 
  • ½ cup almond butter 
  • ¼ cup honey 
  • 25g butter 
  • 1 tsp vanilla essence 
  • Pinch of salt 

Garnish (optional):

  • 2 tbsp desiccated coconut 
  • 1 tbsp desiccated rose petals 
  • 1 tsp toasted sesame seeds 
  • 1 tsp black sesame seeds 

Method:

  1. Place the toasted muesli into a large mixing bowl. 

  1. Add the almond butter, honey, butter, vanilla essence and salt to a small saucepan. Heat over medium heat, stirring, for 2–3 minutes or until the butter has melted and the mixture is smooth and combined. 

  1. Pour the warm mixture into the bowl with the muesli and mix well using a rubber spatula until evenly coated. 

  1. Line a 20cm x 25cm rectangular or square tray with baking paper. Spoon the mixture into the tray and spread evenly, then place another sheet of baking paper on top. 

  1. Flatten the muesli mixture with your hands until firm and even. 

  1. Sprinkle over the garnish ingredients, if using, then press again with the baking paper so they stick to the mixture. 

  1. Place in the fridge and let set for 1 ½ hours or until firm. 

  1. Remove from the tray and place on a chopping board. Cut into equal rectangular bars and enjoy chilled or at room temperature. 

Notes 
Bars slice more cleanly if you use a sharp knife and wipe the blade between cuts. 
Store in an airtight container in the fridge for up to 5 days.
