Cucumber and Apple Cider Oysters


Prep time: 10 minutes 
Makes: about 1 cup 

Ingredients: 

  • 1/3 cup cucumber, finely diced (brunoise) 
  • 1 tbsp eschalot, finely diced (brunoise) 
  • 1/4 cup apple cider vinegar 
  • 1 tbsp white wine vinegar 
  • Freshly ground black pepper, to serve 
  • 12 freshly shucked oysters 

Method: 

  1. Place the cucumber, eschalot, apple cider vinegar and white wine vinegar in a small bowl and mix until combined. 
  2. Season with pepper and refrigerate until well chilled. 
  3. Spoon over oysters to serve.
