Cucumber and Apple Cider Oysters

Prep time: 10 minutes
Makes: about 1 cup
Ingredients:
- 1/3 cup cucumber, finely diced (brunoise)
- 1 tbsp eschalot, finely diced (brunoise)
- 1/4 cup apple cider vinegar
- 1 tbsp white wine vinegar
- Freshly ground black pepper, to serve
- 12 freshly shucked oysters
Method:
- Place the cucumber, eschalot, apple cider vinegar and white wine vinegar in a small bowl and mix until combined.
- Season with pepper and refrigerate until well chilled.
- Spoon over oysters to serve.
