Easy Halloween Fruit Platter
Prep time: 20 minutes
Ingredients:
- 3 Granny Smith apples (or apple of choice), quartered and core removed
- ¼-½ cup smooth peanut butter, or choice of nut or seed butter
- ¼ cup strawberries, sliced
- Pine nuts, slivered almonds, sunflower seeds or pumpkin seeds
- 4 mango cheeks, cut into a criss cross pattern
- 2 bananas, halved
- ½ cup blueberries
- Edible candy eyeballs, as needed
To prepare the apple monsters:
- Cut a wedge out of each apple quarter to create the monster ‘mouth’.
- Spread 1-2 teaspoons (or as desired) of peanut butter onto the monster ‘mouth’ (the area of the apples you just cut out).
- Place a slice of strawberry into the middle of the peanut butter.
- Arrange the pine nuts on the peanut butter to resemble monster teeth. If the pine nuts don’t ‘stick’ to the peanut butter, you may need to use a sharp knife to create indents in the apple for each pine nut. Don’t worry about being neat – the monsters are meant to look scary!
- Smear some peanut butter on the top of each apple quarter and stick on the candy eyeballs.
To prepare the mango, banana and blueberry monsters:
- Smear some peanut butter on the fruit where you’d like to place the candy eyeballs.
- Place the candy eyeballs on the fruit as desired.
- Arrange all fruit on a large platter and serve within 3 hours!
