Spanish Chorizo Eggs

Spanish Chorizo Eggs
Ingredients
- 2 onions (medium)
- 4 potatoes (medium)
- 1/2 cup olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1-2 spanish chorizo sausage (to cook)
- Extra virgin olive oil
- 4 eggs
Method
- Peel and chop onions.
- Peel, wash and slice potatoes.
- In a large non-stick skillet heat one cup of olive oil.
- When warm add chopped onions and 1/4 teaspoon of salt, cook and stir over medium heat for 4 - 5 minutes.
- Add sliced potatoes, cover the skillet with a lid and stir-fry over low-medium heat for 12 - 15 minutes or until potatoes are tender and beginning to crisp.
- Season with some salt and ground black pepper and set aside.
- Slice Spanish chorizo sausage.
- Fry for 3 - 4 minutes over medium heat the Spanish chorizo sausage in a small skillet with a few drops of olive oil
- Drain off the grease of the skillet with chorizo. Otherwise it could be an extremely heavy dish!
- Place chorizo sausage into the large skillet with the potatoes and onions and mix.
- Heat some oil in a non-stick skillet and fry eggs to your liking and place them on the top of large skillet.
HINTS FOR FRYING A EGG. Place half a cup of olive oil in a non-stick frying pan. Fry cracked egg over high heat. Do not overcook yolk and try to get a delicate crunchy white.
