Spanish Chorizo Eggs

Spanish Chorizo Eggs

Ingredients

  • 2 onions (medium)
  • 4 potatoes (medium)
  • 1/2 cup olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1-2 spanish chorizo sausage (to cook)
  • Extra virgin olive oil
  • 4 eggs

                Method

                1. Peel and chop onions.
                2. Peel, wash and slice potatoes.
                3. In a large non-stick skillet heat one cup of olive oil.
                4. When warm add chopped onions and 1/4 teaspoon of salt, cook and stir over medium heat for 4 - 5 minutes.
                5. Add sliced potatoes, cover the skillet with a lid and stir-fry over low-medium heat for 12 - 15 minutes or until potatoes are tender and beginning to crisp.
                6. Season with some salt and ground black pepper and set aside.
                7. Slice Spanish chorizo sausage.
                8. Fry for 3 - 4 minutes over medium heat the Spanish chorizo sausage in a small skillet with a few drops of olive oil
                9. Drain off the grease of the skillet with chorizo. Otherwise it could be an extremely heavy dish!
                10. Place chorizo sausage into the large skillet with the potatoes and onions and mix.
                11. Heat some oil in a non-stick skillet and fry eggs to your liking and place them on the top of large skillet.

                HINTS FOR FRYING A EGG. Place half a cup of olive oil in a non-stick frying pan. Fry cracked egg over high heat. Do not overcook yolk and try to get a delicate crunchy white.
