Chocolate Brownies with Strawberries and Chocolate Ganache

 

These moorish brownies with fresh Queensland strawberries topped with chocolate ganache are a chocolate foodies heaven! The very addictive and beautiful QLD strawberries add a delicious freshness and tang with every bite. Watch these disappear before your eyes! 

Makes 24 portions.

INGREDIENTS

Brownie mix:

  • 200 grams dark chocolate buttons

  • 200 grams unsalted butter melted

  • 2 cups caster sugar

  • 4 x eggs beaten

  • 85 grams sifted cocoa powder

  • 1/2 cup all-purpose plain flour sifted

  • 1 tsp baking powder

  • 1 tsp vanilla extract

  • 2 cups fresh strawberries halved

Chocolate Ganache:

  • 2 1/3 cups dark chocolate chips

  • 1 cup cooking cream

METHOD

  1. Preheat oven 160°C. Line a 27.5x 17.5 x 3.5 rectangular baking tin with baking paper.

  2. In a bowl stir together the sugar, cacao powder, flour, and baking powder. In a separate bowl mix the eggs, butter, and vanilla extract until combined, add the chocolate buttons, and stir through.

  3. Pour the wet ingredients into the dry ones and gently fold through until combined.

  4. Pour into the baking tin and bake for 40-45 minutes. Once cooked, let it cool completely in the tin.

  5. Cut your strawberries in half and place them on top of your cooled brownie mixture. While the brownies are cooling make your chocolate ganache. Place your chocolate chips into a glass bowl set aside.

  6. Place the cream into a small saucepan over medium heat when bubbles start to break around the surface and edge of the pan remove from the heat.

  7. Pour over the chocolate chips (do not stir). Let it sit for 5 minutes (Note: I like to time mine then using a whisk gently mix the chocolate until you have a shiny thick smooth sauce). Pour over the strawberry layer.

  8. Refrigerate brownies for 15 minutes until the ganache has set. Add a final flourish of either grated chocolate or cocoa powder. Cut into 12 squares and serve.
