Bursting Tomato & Burrata Crostini
This is the perfect snack to serve up when you're entertaining or just want a simple light meal and time isn’t on your side.
INGREDIENTS:

2 punnets snacking tomatoes

3 tbsp olive oil

1 tbsp red wine vinegar

Salt Black pepper

4 slices of sourdough bread

1 tbsp olive oil
-
2 x 100g ball Burrata mozzarella

tbsp pesto
METHOD:

Preheat an oven to 190°

Place the snacking tomatoes into a small baking tray and add the olive oil, vinegar and season with salt and black pepper.

Roast for 6 minutes until bursting. Remove and allow to sit.

Preheat a grill pan or frying pan over a high heat. Brush the sourdough with olive oil and grill until nicely charred and golden then cut each piece in half. Tear the Burrata mozzarella over the bread, season with a little salt and pepper then top with the tomatoes, their juices and finish with the pesto.
