Bursting Tomato & Burrata Crostini


Bursting Tomato & Burrata CrostiniThis is the perfect snack to serve up when you're entertaining or just want a simple light meal and time isn’t on your side. 


  • 2 punnets snacking tomatoes

  • 3 tbsp olive oil

  • 1 tbsp red wine vinegar

  • Salt Black pepper 

  • 4 slices of sourdough bread

  • 1 tbsp olive oil

  • 2 x 100g ball Burrata mozzarella 

  • tbsp pesto



  1. Preheat an oven to 190°

  2. Place the snacking tomatoes into a small baking tray and add the olive oil, vinegar and season with salt and black pepper.

  3. Roast for 6 minutes until bursting. Remove and allow to sit.

  4. Preheat a grill pan or frying pan over a high heat. Brush the sourdough with olive oil and grill until nicely charred and golden then cut each piece in half. Tear the Burrata mozzarella over the bread, season with a little salt and pepper then top with the tomatoes, their juices and finish with the pesto.
