Sweet, light and fluffy. Start your day the right way with nature's own superfood, blueberries.
- 1-2 punnets of blueberries
- 1 cup self raising flour
- 1 cup plain flour
- 2 eggs
- 4 cups of milk
- pinch salt
- pinch sugar
- Whisk all ingredients until smooth. The batter should resemble thick pouring cream. You may need to add a little more flour or milk to get the right consistency. Rest batter for 30 mins.
- Ladel batter into hot fry pan then drop as many blueberries as you want onto the pancake. When the pancake is caramelized on the bottom and looks dry on top it is time to flip and cook though.
- Lemon juice and castor sugarmake a fantastic dressing for pancakes. Drizzle over the top to finish.
