      Method

      To prepare the ocean trout:
      1. Lay the fish skin side down on baking paper on a baking dish close together so it looks like a whole side of fish.
      2. Sprinkle with sumac, cumin, coriander, sugar, salt and pepper. Allow to stand for a couple of hours. In cooler weather, on the bench is fine, otherwise refrigerate.
      3. Bake at 140 degrees for 15 - 25 minutes until medium rare or longer according to preference.

       

      To prepare the salsa:
      1. Combine all salsa ingredients and spread over the fish after cooking.

       

      Note:

      You can also make a dressing to serve on the side of tahini, yoghurt and lemon juice. This can also be spread on the cooked fish before the salsa goes on top.

      This recipe uses separate fillets, but if you use the whole side of the fish it is more spectacular.
