Goose On The Loose Pork Salami with Black Truffle 

Salame al Tartufo is a treat for special occasions in Italy, we make ours with free range pork loin from the Darling Downs and Black Truffle imported from Italy, ideal with a hard cheese such as Parmesan or Pecorino and a crispy white wine or fruity European style beer.

Black Summer Truffles (Tuber aestivum) spring up between June and October in northern Italy. They are found by specially trained dogs or pigs who sniff out their hiding spots where they are then gathered by hand. The local mushroom enthusiasts each have a secret spot or two where they hope to find some of their own truffles every year.
